Last week I started working out at the gym. I actually worked out every other day which for those of you who know me is really impressive. I HATE the gym more then just about anything. Since I have been going to the gym, I have been trying to eat a bit healthier as well. I have been putting together salads for my weekday lunches on Sunday so there is no temptation to eat donuts, sandwiches etc. So many tupperwares to fill – it is actually kind of fun! I get a little assembly line going.
My salad includes spinach, some grilled chicken, cherry tomatoes, olives, marinated artichoke hearts and some homemade lemon lime garlic dressing. It is the perfect lunch and it leaves me satiated until dinner. The dressing is super easy to make and the recipe makes enough for one week of lunches. Enjoy!
Juice of 1 Lime
Juice of 1 Lemon
3 1/2 tablespoons of extra virgin olive oil (EVOO)
2 cloves garlic, chopped finely
1/2 teaspoon sea salt
1/2 teaspoon fresh ground pepper
1/2 teaspoon garlic powder
1/4 teaspoon red pepper flakes (optional)
1. Wisk all of the ingredients together in a bowl.
2. Pour into a cruet and chill in the refrigerator for 30 minutes.
3. Serve atop your favorite salad.
