SO MUCH BASIL: Lemon Basil Tomato Chicken + Asian Style Broc Slaw Salad

So I have started a little garden in my apartment #urbangarden. I have a basil, rosemary, lavender and parsley plant in addition to several succulents! So many herbs everywhere! Our basil plant was growing everywhere so I decided to use a whole bunch in some easy to make chicken. The chicken was really flavorful and moist!  I hope you like it as much as Eric and I did!
Lemon Basil Tomato Chicken
Boneless Chicken Breast
Fresh Basil
2 cloves garlic, chopped
Juice of 1/2 a lemon
2 Roma tomatoes, chopped
1 tablespoon olive oil
1. Preheat the oven to 350 degrees.
2. Clean the chicken.
3. Place the chicken into a plastic bag and drizzle the olive oil on top.
4. Place the chopped basil, chopped garlic, and chopped Roma tomatoes into the bag.
5. Squeeze the juice of half a lemon into the bag.
6. Allow to sit in the juices for 20 minutes.
7. Place the chicken into a Pyrex and pour all of the other ingredients on top of the chicken.
8. Bake in the oven for 20 minutes.
9. Eat it all up!
Asian Style Broc Slaw Salad
Broc Slaw Salad (sold in most grocery stores)
Cherry Tomatoes, halved
2 Baby White Onions, chopped
1 Bell Pepper, any color, chopped
Asian Dressing
1/2 teaspoon of garlic salt
3 leaves parsley, chopped
2 tablespoons rice vinegar
2 tablespoons olive oil
PS. I have also used this dressing for my massaged kale salad (yes, we massage it with olive oil to break it down a bit) with blueberry Craisins and pine nuts. DELICIOUS!
