BAKEME: Apple Banana Bread

Passover starts this week and with the holiday comes cleaning, cooking and matzah. I am in denial a bit about it and the food that comes with it so I made what any normal Jewish wife would make the week before Passover – APPLE BANANA BREAD! Ha! And it was delicious. Here is a photo just as it came out of the oven!

Margarine, 1/2 cup  (1 stick)
Whole Wheat Flour, 1 cup
White Flour, 1/2 cup
Baking Powder, 1 teaspoon
Salt, 1/2 teaspoon
Baking Soda, 1/4 teaspoon
Banana, 1 large ripe
Gala Apple, 1 large, peeled and chopped
Granulated Sugar, 3/4 cup
Eggs, 2 large
Vanilla Extract, 1 teaspoon
Cinnamon, 1 teaspoon


  1. Heat oven to 350 degrees Fahrenheit.
  2. Spray loaf pan with Pam or use parchment paper.
  3. Whisk flour, baking powder, salt and baking powder in separate bowl.
  4. In a large mixing bowl, mix together butter, sugar till creamy.
  5. Slowly add eggs, vanilla, cinnamon, banana and apples.
  6. Add the flour mixture and mix until just combined. Be careful not to over mix.
  7. Fold in the pecans (if desired).
  8. Spread the batter into the loaf pan and bake until toothpick inserted in center comes out clean  (~50 minutes).
  9. At 35 minute mark, if top appears to be browning too quickly, cover with foil lightly.
  10. Cool in pan for 15 minutes, then transfer to wire rack to cool.
