SIDE DISH: Fiesta Spicy Rice

I adapted/concocted this recipe from the back of an Uncle Ben’s Whole Grain rice box. It is great as a side for enchiladas or for inside a burrito. You can even add some cut up grilled chicken to it. And it is pretty cheap and easy to make! All things I love!

Ingredients:
1 cup Uncle Ben’s Whole Grain rice
2 cups water
1 cup salsa (spicy or mild – whatever your taste is!)
1/4 cup corn
1 orange or yellow pepper – sliced and diced 
Pinch of garlic salt
Pinch of red pepper flakes

Instructions:
1. Pour water into pot. 
2. Pour rice into pot. 
3. Let the rice come to a boil. 
4. Add the salsa, corn and pepper. 
5. Let simmer until the rice is cooked and has soaked up all of the water. 
6. ENJOY!
